Spicy Quinoa Salad

Spicy Summer Quinoa Salad

A healthy summertime snack that is great to bring to picnics. It’s also a favorite to bring to work in our office! Adding spicy ranch to quinoa gives it a creamy texture with a spicy flare. With only 5 ingredients it’s also quick and easy to make!

What You Need

  • 1 – 16oz box of quinoa
  • 1 jalapeno
  • 1 ear of corn
  • 1 can organic black beans
  • 1/2-1 cup of spicy ranch (add more or less depending on how you want the creaminess of your salad)
  • 1 avocado (optional)

What To Do

Cook quinoa as directed on box, and boil corn for 10-15 minutes. While quinoa and corn are cooking, drain black beans and slice jalapeno into small pieces.  Once corn and quinoa are cooked, skin corn off of the cob and drain quinoa. Mix all ingredients together in a large bowl. Add ranch until you reach desired creaminess. Enjoy!
