Chicken Parmesan Spinach Flatbread

This light and savory flatbread is great as an appetizer or as a light dinner for two. It only takes a few ingredients and about 20 minutes, so next time you forget you were supposed to pick up dinner for your beau or that your family is coming to town fool them all with this recipe.


  • Flatbread
  • 6 oz. (each) shredded Mozzarella and Parmesan
  • 1 large chicken breast
  • 4 oz. fresh spinach
  • diced red pepper
  • optional: crushed walnuts
  • optional: any other bright veggies you like (mushrooms, pineapple, onions)


  • Heat¬†oven to 425
  • Grill or bake chicken, lightly shred, slice or dice
  • Apply a thin layer of cheeses
  • Evenly distribute toppings
  • Top with remaining cheese
  • Bake for 10 minutes until brown and slightly crispy
  • Top with or dip in Cosmo’s Spicy Ranch
